What food would you travel for? ‘I grew up in Florida eating fresh citrus, and lately I've been seeking out new citrus flavours. I enjoyed sudachi in Shikoku, Japan, and bergamotto and citron in Sicily. I’d like to explore the botanical origins of citrus in the Himalayan foothills – eastern Assam, northern Myanmar and western Yunnan are said to be its birthplace.'
